I’m a fan of a wide variety of cookies. Soft cookies, crunchy cookies, chocolate cookies, savoury cookies…you name it, I’m going to eat them. Every time the weather gets a bit cooler, these cookies always tend to pop back up on my radar.

Ingredients to make these Chocolate Cookies with Toffee Bits
- 1 stick butter, softened
- 1 cup of sugar
- 1 egg, room temperature
- 1.5 tsp vanilla extract
- 1 cup flour
- 6 tbsp cocoa powder
- 1.5 tsp baking soda
- Pinch salt
- 1 cup white candy melts
- ½ cup toffee bits
How to make these Chocolate Cookies
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
In a stand mixer, start mixing butter, sugar, egg, and vanilla until smooth and creamy.
In a separate bowl, sift together flour, cocoa powder, baking soda, and salt. Add to your wet ingredients slowly, one third at a time.
Once the cookie dough is formed, use the drop method to place it on your lined baking sheet (about 2 inches apart from each other). Bake for 8 to 10 minutes and allow to cool on a rack before decorating.
Microwave candy in 30-second intervals until completely melted. Dip each cookie halfway and place carefully on your lined baking sheet. Sprinkle with toffee bits.
Allow the cookies to set in the refrigerator for about 30 minutes.
